Good morning, Princeton. I hope you and your family have a wonderful Christmas together! For the Bullingtons, the festivities begin with the Christmas Eve service at Princeton Bible Church at 6 PM. After that, we’re off to my in-laws’ for a meal, games, and presents. On Christmas Day, my extended family is coming over to our house for lunch, more games, and presents, and then we’ll head back to my in-laws’ for another meal.

That’s a lot of eating! Here we go.

⏲️A CHRISTMAS RECIPE

Peppermint Hot Cocoa Truffles

A rich and indulgent treat that melts into hot milk for instant peppermint hot cocoa—or enjoy them as bite-sized truffles!

Ingredients

• 1 cup (200 g) semi-sweet chocolate chips

• 1/2 cup heavy cream

• 1/4 tsp peppermint extract

• 1/4 cup cocoa powder (for rolling)

• Crushed peppermint candies or candy canes (optional, for garnish)

Instructions

1. Heat the Cream: In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer. Remove it from heat before it boils.

2. Melt the Chocolate: Place the chocolate chips in a heatproof bowl. Pour the warm cream over the chocolate and let it sit for 2-3 minutes. Stir until the chocolate is fully melted and the mixture is smooth.

3. Add Peppermint: Stir in the peppermint extract. Taste and adjust the amount if you want a stronger mint flavor.

4. Chill the Mixture: Cover the bowl and refrigerate for 2 hours, or until the mixture is firm enough to scoop.

5. Shape the Truffles: Using a small spoon or melon baller, scoop the chilled chocolate mixture into 1-inch balls. Roll each ball between your palms to smooth it.

6. Coat the Truffles: Roll the truffles in cocoa powder for a classic finish. For a festive touch, roll them in crushed peppermint candies instead.

7. Serve or Store: Store the truffles in an airtight container in the fridge for up to two weeks. To enjoy as hot cocoa, drop one or two truffles into a cup of hot milk and stir until melted.
