Happy Friday morning, Princeton. Last night I hit a milestone on my quest for the perfect brisket. It began Tuesday with my purchase of a 17-pounder from Sullivan’s. I covered it with Kosher Salt that night and it brinded (bround?) until last evening at 7pm. I covered it with olive oil, and then pressed a pepper-coffee-garlic-salt rub into to it. Then it sat in my smoker at 225 degrees as I caressed and sang it beautiful songs all night long. It’s still smoking until it reaches 203 degrees (around 3pm), and then it will rest in a dry cooler, wrapped until 6pm. I will serve it at my daughter’s family birthday get-together, and if it’s bad…we’ll pretend it never happened.
Let’s go!
